闪冻

闪冻阶段

闪冻是一种传统长期冷冻的替代品。产品的快速冷却有助于保持食物的风味和自然品质,以及加快过程。这种保管制度需要用更少的防腐剂,从而延长了产品的保质期,并使最终用户额外的获益。

MultiCold进行三个阶段的闪冻。首先是冷却,产品通过-65°C的气流通风。45分钟后产品温度降至0°C。

然后是结晶,产品冷却至-5°C。与冰块大量积聚时的长时间冷冻不同,闪冻会带来产生不会损坏产品的微小冰晶。这样,产品保持原样。

最后的阶段是完全冷冻。冷却过程缓慢起来,产品冷却至-18-24°C。因此,即使在冷冻状态下,产品也能保持其所有特性,类似于Fresh级产品(水果或蔬菜)。
